What Is Tahini?

Tahini is a thin sauce or spread made out of ground toasted sesame seeds, after they’re soaked in salt water and crushed to separate the kernels from the bran. To avoid the tahini spoiling from its high oil content, it’s refrigerated during transport and before use. Tahini is a Mediterranean condiment also commonly used in Chinese, South East Asian and Vietnamese food. When made without any additives, it’s commonly known as raw tahini. It’s sometimes eaten alone or added to hummus for a creamier flavor. It’s also used in baba ghanoush or halva.

Tahini has a bitter, oily taste.
