What Is Rhubarb?
Rhubarb is a red purple stemmed, green leafed perennial vegetable that is commonly used in cooking desserts. The leaves and roots are poisonous. The stem can range in color from purple to red to green. It has the appearance of celery but due to its taste it is often mixed with sweet pies containing fruits and rarely eaten raw. It’s thought to have originated in China, where the stem was used for medicinal purposes.

Rhubarb has a sour and tart flavour, usually best cooked and mixed with other ingredients.
