Salt removes some of the natural bitterness from the eggplant – smaller eggplants are also less likely to be bitter and have less seeds. Avoid eggplants that have soft spots or skin that isn’t firm and taut. Eat raw or cooked, as preferred.

The root of the wild aubergine is often boiled with porridge and sour milk as a simple and natural cure for syphilis. The fruit has a cooling ability and is often used as a poultice, when mixed with vinegar, for a range of grazes, bruises and abscesses.

Yuca has a creamy taste. They also have a more starchy and fibrous texture than similar tasting food (such as potato or sweet potato). They can be quite bland, so often need some sauce or flavoring added.


Cassava is often confused with the sweet potato – however the two are completely different. Many western stores sell sweet potatoes, incorrectly labelled as cassava. Cassava tubers can also grow as big as 100 pounds. Yuca should always be cooked to remove cyanogenic glycosides which can have ill effects on the human body.

Nutmeat tastes nutty and slightly salty, but is rather a plain and acquired taste. To some, it may be reminiscent of tofu, but with a nuttier flavor without the heavy soy taste.


Many people like to add condiments such as tomato or barbecue sauce or gravy to add flavor to nutmeat.

MSG on its own doesn’t have a taste. However it intensifies and carries the flavor of savory foods, so is commonly used to make flavors stronger.


Although MSG is an additive, it’s not always listed on the ingredients as one. Other items (such as ‘yeast extract’) are often mentioned in place of directly listing MSG.
